Crowned Spare Rib with Chestnut Stuffing
Ingredients:
- 2 sparerib racks
- 4 tbsp butter
- 1 small onion chopped
- 1 clove garlic minced
- 2 stalks celery chopped
- 1 1/2 cups bread crumbs
- 1/4 cup chestnuts
- 1 tsp salt
- 1 tsp pepper
Directions:
Preheat the oven to 350 degrees. Saute the onion, garlic and celery in a small saucepan with 1 tbsp of butter. In a large mixing bowl, combine the onion, garlic, celery, chestnuts, salt, pepper, 3 tbsp butter, and bread crumbs. Meanwhile form the sparerib into a crown and hold it together with skewers. Place the crowned spareribs into a roasting pan and put the stuffing into the center. Bake the spareribs for 1.5 - 2 hours.
Spicy Tomato Smothered Spare Ribs
Ingredients:
- 2 spare rib racks
- 1 small onion chopped
- 1 clove garlic minced
- 1/2 can tomato sauce
- 2 can tomato paste
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp cayenne pepper
Directions:
Preheat the oven to 450 degrees. Place the spare ribs into the oven for 25-30 minutes. Reduce the heat in the oven to 350 degrees. Meanwhile, bring to a boil the onion, garlic, tomato sauce, tomato paste, Worcestershire sauce, salt, pepper, and cayenne pepper. Smother the spare ribs with the tomato mixture and place them back into the oven for 35-40 minutes.
